What is kefir, exactly?
Kefir is a fermented probiotic beverage, traditionally made with kefir "grains," which are actually not grains at all—rather, these gelatinous blobs are a symbiotic colony of bacteria and yeast, also known as a SCOBY. The result is an effervescent beverage with a tangy flavor and consistency akin to sparkling water or other fizzy drinks.
The word kefir comes from the Turkish word keyif, meaning "feeling good"; aptly named for the short- and long-term benefits of consuming this enzyme-rich drink, from the ease of digestion to the strengthening of the immune system.
While milk kefir originated in the Caucasus mountains, water kefir likely started in Mexico. Water kefir grains, also called tibicos, form on the pads of the Opuntia cactus.



A beginner-friendly starter culture
If you're just getting started in the fermenting and culturing world, this is a good one to start with.
- Grains arrive dehydrated, so you don't have to start right away and can go at your own pace.
- Water kefir cultures at room temp (68-85°F), so you don't have to keep them heated.
- Everything you need will already be lying around the house: a jar, a strainer, a coffee filter, and a rubber band.
- Some cultures can take a week or even up to a month to culture; water kefir is ready in 24-48 hours.
Did someone say "infinite kefir"?
The gift that keeps on giving
Kefir starter grains are an heirloom culture, meaning you can reuse the grains over and over for as long as you want and essentially have a limitless supply of kefir!
Once a batch is done and the grains have been strained, you can plop them right into a fresh quart of sugar water and start a new batch. Finished kefir lasts up to 2-3 weeks in the fridge.
If you need a break, you can always keep the grains in the fridge for a nap (tucked in to some sugar water) or dry the grains for a hibernation.
- NAP: Add grains to 1 quart sugar water (¼ cup sugar dissolved in quart of water), and put a tight lid on container. Grains will stay healthy in fridge for up to 3 weeks.
- WAKING UP: Separate grains from storage liquid, add to fresh sugar water, and culture as usual. May take a few batches to return to normal.
- HIBERNATION: Rinse thoroughly with filtered water; lay on unbleached parchment paper for 3-5 days at room temp. Place in airtight bag; store in fridge up to 6 months.
- REHYDRATING: Follow same instructions as when you first activated them.

Versatile and simple to make
Water kefir makes a tasty beverage to sip on, but it's also easy to flavor in a second ferment, which additionally gives it that extra bubbly consistency.
You can also use kefir as an ingredient in a wide array of recipes for a probiotic boost! (Note: Avoid heating kefir to preserve probiotics.)

This refreshing shake is low on sugar and heavy on probiotics! While it's not too similar to the overly sweet commercial shake, you'll love the minty flavor.
Ingredients: 1 ½ cups water kefir | ½ cup coconut milk | ½ ripe medium avocado | 3 large kale leaves | ¼ tsp mint extract | 1-3 tsp honey, or to taste | 4 large ice cubes
- Combine water kefir, coconut milk, avocado, and kale in blender. Blend until smooth.
- Add mint, honey, and ice cubes and blend thoroughly.
- Taste and add more honey as desired for sweetness. Blend again until completely combined. Serve immediately.

Water kefir is the perfect ingredient for this old-fashioned cream soda recipe. Add a scoop of ice cream, for an extra-special treat.
Ingredients: 1 cup honey | 1 cup water | 3 tbsp vanilla | 4 cups water kefir | 2-4 tbsp heavy cream
- Add honey and water to a small pot and heat gently, stirring until honey is completely dissolved. Remove from heat. Add vanilla and cool completely.
- Combine cooled honey mixture with water kefir.
- Fill flip-top or similar bottles with flavored water kefir mixture. Cap tightly and ferment 24-48 hours or until bubbly. This mixture tends to taste a little yeasty after 72 hours of bottling.
- Pour cream into the bottom of a tall glass. Fill glass with bubbly water kefir. Enjoy!

Thick, tangy, sweet, and pungent—everything you want in a honey mustard dressing. Perfect for salads, vegetable crudité platters, or even chicken nuggets.
Ingredients: ¼ cup honey, warmed to a pourable consistency | 2 tbsp water kefir (still slightly sweet) | 3 tbsp Dijon mustard (or lacto-fermented mustard) | 2 tbsp apple cider vinegar | Pinch of salt
- Combine all ingredients in a pint jar and shake well. Taste and add salt as needed.
- Serve right away, or allow to sit at room temperature for up to 2 days or in the refrigerator for up to a week.

Making gelatin desserts with water kefir and berries isn’t much of a stretch when you’re making fizzy bottles of berry-infused water kefir already.
Ingredients: 3 cups water kefir, plus more as needed | 1 cup tightly packed fresh berries | 3 tbsp raw honey (optional) | Fresh berries (optional) | 5 tbsp gelatin powder
- Combine 1 cup kefir and berries in blender. Blend until liquefied. If liquid level hasn't reached 2 cups, add more kefir and blend. Add honey if desired.
- Slice berries, if large, and spread evenly in the bottom of a large glass bowl or baking dish.
- Pour 1 cup kefir into small saucepan. Sprinkle gelatin powder over top and heat over a very low burner. Gently warm mixture to dissolve gelatin powder. Do not overheat, as it will destroy beneficial probiotics and enzymes of the water kefir.
- Once gelatin begins to dissolve, remove from heat and whisk well, scraping bottom and sides for any gelatin powder sticking to pan. Once mixture is completely dissolved, combine with remaining kefir and blended berry-kefir liquid. Pour over berries, then place immediately in fridge to chill for 4-8 hours. Serve plain or with whipped cream.
