What is kefir, exactly?
Kefir is a fermented probiotic beverage, traditionally made with kefir "grains," which are actually live probiotic cultures. The word kefir comes from the Turkish word keyif, meaning "feeling good"; aptly named for the short- and long-term benefits of consuming this enzyme-rich drink, from the ease of digestion to the strengthening of the immune system.
Milk kefir grains are grown from milk, and water kefir grains are derived from the cactus plant. This starter comes in the form of freeze-dried powder, and is able to culture both milk and water kefir, allowing you the chance to figure out what you like and dip your toe into the culturing process!

The easiest starter culture you'll ever use
Perfect for beginners
No re-hydrating, no daily feeding, no pH strips, no heat—simply mix starter into desired drink, cover, and let culture at room temp (72-74°F/22-23°C).
Additionally, this offers a lower level of commitment than heirloom kefir grains; you can choose to re-culture a few times, or just drink it all.

With this starter, you'll be able to culture at least 1 gallon of kefir, with the potential to re-culture up to another 7 gallons.
Even if you make no extra batches, you'll be spending the same amount on bottled kefir at the store, so with every extra batch you make, you'll be saving money!
Pro Tips!
- For best results, start next batch as soon as previous batch is done.
- Once you choose which ingredient to culture the kefir (e.g., milk), re-culture with same.
- Kefir is done culturing when thick like heavy cream (dairy milk) or cloudy and less sweet (other).
- Simply reserve ¼ cup of previous batch for each quart you wish to culture.
- Finished kefir stays good in fridge for 2-3 weeks.
Unlike with grains, this powdered starter allows you to make kefir using just about any drink you desire:
Milk kefir
The traditional and most well-known form of kefir, this dairy drink is similar to a thin yogurt, but even easier to digest.
Water kefir
Because water doesn't naturally have sugar for the microorganisms to feed on, you have to add sugar before the starter. Not to worry, though—the sugar is for the culture, not for you.
Juice kefir
Not all fermented juice is wine! The natural sugars in juice provide ample food for the kefir starter to do what it needs to do and make a sort of sparkling juice with loads more benefits.

Ingredients: Milk kefir | Fresh or dried herbs, such as Herbs de Provence
- Pour the milk kefir into a bowl lined with butter muslin, a cotton bag, or tight-weave cloth.
- Gather up corners of cloth and hang above bowl or jar and drain for 6-8 hours, or until the desired thickness is achieved. Save the whey in a closed container in the refrigerator. (You can use it to ferment veggies, use as cooking liquid, make drinks, and many other things.)
- Mix herbs into the kefir cheese and refrigerate for 2+ hours to allow the flavors to meld.
- Serve as a soft cheese spread on crackers or bread. Also makes a wonderful vegetable dip.

Water kefir is the perfect ingredient for this old-fashioned cream soda recipe. Add a scoop of ice cream, for an extra-special treat.
Ingredients: 1 cup honey | 1 cup water | 3 tbsp vanilla | 4 cups water kefir | 2-4 tbsp heavy cream
- Add honey and water to a small pot and heat gently, stirring until honey is completely dissolved. Remove from heat. Add vanilla and cool completely.
- Combine cooled honey mixture with water kefir.
- Fill flip-top or similar bottles with flavored water kefir mixture. Cap tightly and ferment 24-48 hours or until bubbly. This mixture tends to taste a little yeasty after 72 hours of bottling.
- Pour cream into the bottom of a tall glass. Fill glass with bubbly water kefir. Enjoy!

A regular staple in both the South and the Midwest parts of the United States, cornbread gets a twist on the traditional by using milk kefir.
Ingredients: 2 cups yellow cornmeal | 1 ½ tbsp sugar | 2 tsp baking powder | 1 ½ tsp baking soda | 1 tsp kosher salt | 1 cup milk kefir | 1 egg | 3 tbsp butter, very soft
- Preheat oven to 375°F/190°C. Butter an 8-inch square pan or 10-inch cast-iron skillet.
- Mix together the cornmeal, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the kefir, egg, and butter together until fully incorporated. Add the dry ingredients and mix well.
- Pour the batter into the prepared pan and bake for 30-35 minutes until golden and firm to the touch. Remove from oven and cool.

Bubble tea is a fun drink that originated in Taiwan but became a hot trend in North America recently. This version is lower in sugar and higher in nutrients!
Ingredients: 2 cups cold kombucha or water kefir | 2 tbsp maple syrup or other sweetener (optional) | ½ cup dairy or non-dairy milk or cream | ½ cup mango, pomegranate, or other juice | 1 cup black tapioca pearls (found online or at an Asian grocery store)
- Bring a pot with at least 5 cups of water to a boil. Add black tapioca pearls and boil for 5 minutes, then remove from heat and let sit for 10 minutes more.
- While the tapioca pearls are cooking, combine the other ingredients in a pitcher or other large pitcher or other pouring vessel.
- Once cooked, add the tapioca pearls to individual glasses.
- Pour the kefir mix into individual glasses and enjoy!
