Verified PurchaseLet me preface this by saying that these dough presses are NEVER going to work the way the manufacturer describes. If that’s what you’re expecting, don’t buy them. However, they will be of some help when you’re making a large number of items, such as empanadas, if you follow the steps I’ve learned by trial and error:
1) Be sure your dough is VERY cold (chilled in the fridge for at least one hour) before you try using the press. It may be best to take only two or three rounds at a time out of the fridge.
2). LIGHTLY brush melted butter or oil onto the press, especially the crimped edging, before inserting dough; wipe off any excess.
3). Use only the amount of filling recommended in your recipe. Overfilling will cause any extra to squeeze out when you close the press. For example, the 5-inch press I use for empanadas will need one-and-one half tablespoons of filling (the content of a #40 portion scoop.)
4). Place your dough round in the buttered/oiled press, GENTLY pushing down into the well (center portion) of the press, and brush the entire edge of your dough with beaten egg or egg white.
5). Add your filling, shaping it with your fingers to conform to the lengthwise shape of the press. In other words, if your blob of filling is round, adjust it to a long oval shape.
6). Close the press, and squeeze all around the crimped edging with your fingers. The pressure obtained just from using the handles isn’t enough to get the job even halfway done.
6. To open the press, use a quick, “jerking” motion. This seems to be the best way to keep the contents together and on one side of the press.
7. Remove item carefully from the press, lifting from the center (uncrimped) portion. Once removed, use your fingers to complete the crimping for a non-leaking seal.
While it’s only a fond wish that these presses did what they’re supposed to do, at least their crimping edge serves to “thin” the edges of the dough rounds and make them easier to finish crimping by hand. You also wind up with uniform-sized-and-shaped items that will bake evenly. They're not really worth the money, though.
