- Reviewed in Canada on April 13, 2024Verified PurchaseI had seen a review of the Hone on the Zsa.io blog because I had bought one of their keyboards. I had been wanting one of these types of sharpeners. Since Zsa had mentioned how much they liked it I decided to give this one a try.
I am not disappointed. This is a really good and easy to use sharpener. I have several different kinds of sharpeners including Japanese Naniwa whetstones. Those are really nice and they will get your knives extremely sharp. My problem with them is that I tend to scratch up my blades when I sharpen them. I don't really care, but I do have a knife with a nice pattern on the blade and I was hoping not to ruin it. I had been holding off on sharpening it for that reason.
With this sharpener, the sharpening disks only ever touch your knife edges. They never touch the flat of your blade. And since the roller is on ball bearings it's very smooth and you can get a really fast rhythm going. This is good since it makes the sharpening much less of a chore.
A few other things I like about it:
- It feels very heavy and well made.
- The sharpening disks are replaceable. You can buy other ones with varying coarseness on their website. I don't think any other rolling sharpener has this ability except for a very expensive one I had been looking at.
- The holder is very practical. Each side is used for a different purpose. 2 of the sides are for 15 and 20 degree big and normal sized knives. The other 2 sides are for 15 and 20 degree small knives. I tried it with my paring knife and it works great. Looking at the holders of competing rollers, I don't think you can use them with small knives in any practical way? The knives would slide around too much since magnets are the only thing holding them to the rubber.
- It comes in a gift worthy magnetic closing box. Inside the box there's text that recommends you keep the box and use it to store the sharpener and holder. It says it will keep other things safe from the magnets when sealed in the box. This seems true since the box is really well padded with foam on the inside.
- Finally, the price is very reasonable.
The only thing I would recommend that they improve is that they should include instructions in the box, or even just a QR code to online instructions on the "thank you" card that they include in the box. I have to admit I looked at the knife holder and it took me a while to make heads or tails of it. It isn't obvious what the sides are to someone who hasn't seen pictures or a video of it in use. They are labelled 15 and 20 but I didn't know some sides were for small knives, other sides are for large. I realize now the 鶹 listing has a video... But most videos on 鶹 are terrible and a waste of time so I have to admit I don't usually watch them, and I didn't watch this one haha.
- Reviewed in Canada on March 3, 2025Verified PurchaseSo far this rolling sharpener seems to work fine. I am sure with a bit more practice, I will be able to get my knives sharp enough to cut paper but right out of the box I was able to get a nice sharp edge.
The sharpener itself feels solid and the bearings roll very nice and they feel like they will last a long time. How the discs are fastened to the sharpener is very well done with magnets and super easy to change grits. I was equally impressed with how strong the magnets on the angle/holder block are. Very strong hold and your knife will flex before the magnets let it go.
The box the sharpener came in was also a nice surprise. There is a nice magnetic closure on it and when the box is opened everything is packed well inside foam cut outs to protect everything. There is also additional storage for spare discs as well.
Everything is well thought out from the actual sharpener, the use of magnets for the discs and into the container to nicely and safely store everything. Time will tell how long the discs will last but Hone does sell replacement discs at reasonable prices.
- Reviewed in Canada on November 21, 2023Verified PurchaseFirst of all, I was wanting to wait a while longer before submitting my review, however I will update if I feel there are any more impressive or disappointing long term results.
Pros
- this is a very easy sharpener to use.
-The base is *nearly perfect as is. Has a saddle built into the molding to act as a holder for the roller. The base is double sided for both sharpening angles. Meaning that it sharpens both large and small knives to 15° or 20° depending on what side of the base faces up. Has a ledge molded into the base to hold small knives above base lip.
-The magnets are very powerful and hold knife very securely.
- the diamond sharpening discs are double sided and easy to remove and clean.
- the metal center "handle" of the roller is textured giving a nonslip feel. Being metal it will not swell or suffer any other negative effects of water infiltration.
- there is a 3000 grit ceramic honing disc available on 鶹, and a 200 grit double sided diamond disc available at this time through the manufacturer's website.
Cons
-no registration for warranty.
-both the 400 grit and 1000 grit diamond discs appear to wear extremely fast. Discs considered to be consumables and not covered by warranty. Referr to previous point.
-replacement discs are quit expensive, or very expensive depending on how long they actually last.
I have so far used this sharpener to sharpen 4 kitchen knives in total. 1- 7 inch chefs knife and 3- drop point (similar to santoku) Japanese knives 8inch 7 inch 6 inch.
The first knife sharpened was a 7 inch chef knife. It was not dull, but needed to have edges realigned. Started at 20° with the 400 grit diamond side and zero pressure except to keep roller evenly against blade while rolling. Did 30 passes and could feel a burr, but not along entire edge. Flipped and did 30 along other side with same results. Flipped and did another 25 passes, burr along entire edge now. Flipped and need just over 30 passes to feel entire edge long burr. Flipped and did 15 passes, flipped 15, f10,f10,f8,f8,f5,f5,f2,f2,f1,f1.
1000 grit disc 15 passes, flipped 15 passes, f10,f10,f8,f8,f5,f5,f2,f2,f1,f1. Results were amazing. Finished with a few slices down a 3000 grit ceramic rod, 1 edge trailing pass on each side, finished. No pasted leather. It's a knife not a razor. Could easily shave hairs.
Easily removed discs to wash and dry. Both discs felt smooth as glass on the side used. Wtf. 1 knife is hardly "years" of wear.
The next 2 knives were sharpened to 15° started with the same used disc sides. Knife #2 -8 inch drop point. Had to do nearly 100 passes flipping blade to ensure even wear. I could see black filings but had to flip 400 disc to new side to achieve burr. Once burr was even along both sides I did the reducing number of strokes same as before. Flipped to 1000 grit and finished with 2nd knife with the used 1000 grit. Same amazingly sharp knife results. Nearly 1 hour to sharpen knife #2.
Knife #3 -7 inch drop point 15°. Same as knife #2 except had to flip 1000 grit to see results. At least 1 hour very sharp if not amazingly so.
Knife #4 -6 inch drop point 20°. Same progression as knife #1 used the stone sides with the most grit feel. Over 1 hour to achieve sharp knife. Not impressed.
Knives #1 and #2 are shaving sharp. I know, I sharpen my own straight razors. Both knives will pop hairs. Knives #3 and #4 are sharp. They will pass a thumb nail test, but not pop hairs. I'm not looking for shave sharp, like I said they are knives, not razors. The first 2 got amazing results without much effort, the 1st nearly no effort. But at the cost of well over $$$ for sharpener, the life of diamond sharpening disc should be way longer. If I have to buy new discs already that would mean the sharpener cost almost as much the 4 knives that were sharpened. I have about 8 more knives that I intended to use this sharpener on, but I may have to rethink this. Maybe the discs will go a while yet maintaining the 4 knives that were sharpened, but I doubt that they will be able to realign edges on any other knives the way they are.
* as for that base, near perfect could in my opinion be perfect if the large knife side had the same beveled edges as the small knife sides. The 8" drop point knife that I sharpened is not very wide and only sits above the base at the handle. This means that in order to keep blade flex manageable while sharpening the knife needs to attach to the base at a min 1/3 down the blade which means the blade is too short for the holder, but too tall for the small side of the base. If the large side had the same taper off the corners as the small side of the base, this would alleviate most, if not all of the issue. The magnets are more than strong enough to maintain a hold on the large knives if this was done.
I will reach out to the manufacturer to see if I recieved defective discs, or if this is natural and knife sharpening with this system is intended to take 1+ hrs per knife. I will update this review in future as I am more than willing to give a fair and accurate review.
As things sit at the time of this review, I can only recommend if you have accurately sharpened knives and are looking to maintain for long term. If you are looking to realign your knife edges and resharpen blades fully, I recommend getting your knives sharpened professionally instead.
UPDATE:
Nov. 22, 2023
I reached out to Hone to inform of my experience.
Received a response almost immediately. They assured me that my experience was not the norm, and the sharpening discs must be defective and somehow slipped through quality control. They requested photos to analyze and figure out why they failed so quickly.
They have also offered to replace both the 400 and 1000 grit discs free of charge, and are sending additionally the 200 grit diamond disc and the 3000 grit ceramic hone disc as compensation for my troubles.
WOW, this is customer service that every company should strive to achieve! They are committed completely to customer satisfaction!
Definitely deserve 5 stars for their customer service!
With renewed confidence in the Hone Knife Sharpener team, I honestly now recommend this product to all.
I look forward to trying out the replacement discs, and hope they perform as intended. I will update again if needed.
