  Perfect for strengthening my bread flour for high hydration sourdough bread. A couple TBS. is all that’s needed. Canadian bread flour isn’t much stronger than all purpose. Not nearly enough to produce the gluten needed for 75% hydration dough. Very happy with this purchase!
