    I bought this to try baking a sourdough sandwich shaped loaf for the toaster. Baked both a sweet loaf (with milk, butter, honey) and a standard sourdough loaf (flour, water, starter and salt)., Both turned out great. I prefer the taste of a straight standard sourdough bread, and although a lot of folks said "you can't do a FWYS sourdough in a Pullman pan" I beg to differ.

    I VERY lightly buttered the inside of the pan before popping the shaped loaf in there, and let it proof overnight on the counter (winters in the mountains of BC are chilly, so it was a nice temp for proofing). Got nice oven spring, it didn't blow through the sides of the lid at all, and fell right out of the pan when done. After removing it from the pan, I put it back in the oven for about 15 minutes to brown off a bit.

    My only complaint is that the lid is far from smooth when opening and closing, even when cold. When hot, it requires a good solid whack on the end of the lid to open it. Might just be mine.
    But I am very pleased with the result and will continue to make it this way.
