  This handbook has become my cider making bible. Claude is so detailed and so precise. He gives you all the formulas and graphs of the process that make for excellent references, and you will use them time and time again. He walks you through the processes of making a simple, "first" cider right up to making complex blends, sparklings, etc..etc...I lean on this book heavily and am so glad to have found it. It is the most comprehensive and complete book on cider making that I have found to date.
