    The plates have clips labeled Up and Down. Whichever one points up denotes whether that plate goes up top or on the bottom. None of my plates came with only one up. I damn near broke the machine trying to close it!

    Luckily its as easy as unscrewing and flipping the ones that you want up. I also highly recommend washing the plates two or three times with good grease cutting dish soap. The plates come very oily.

    Don't bang them or drop them, either. They're made from low quality metal that looks ready to shatter if you aren't careful. It honestly looks, sounds, and feels like pewter. But I assume that that it's just very poor quality aluminum. Pewter has a low melting point after all.
