Tips for converting Cake Pan recipes to a Pullman Pan -
Use a 9" x 9" x 4" Pullman Pan and follow a standard cake recipe which makes about 6 cups of batter and is equivalent to:
- 9" - 10" Tube pan
- 9" x 13" Rectangular pan
- three 8" Rounds
- two 9" Rounds
DO YOU NEED A LID?
- YES: for yeasted breads that will rise and push against lid, creating the classic square corners
- NO: quick bread that won’t "mushroom" over the top of the pan, just results in a nice tall loaf. But using a lid shouldn’t hurt!

The USA Pans Pullman Loaf Pan and Cover is constructed of aluminized steel, the material of choice for commercial bakeries. Loaf Pan measures 13 x 4 x 4 inch. The size and design of the Pullman pan makes it ideal for making squared bread loaves and brioche. The metal thickness of this pan has been selected to allow for even heat distribution and maximum service life. An important and unique feature of this pan is its corrugated design. Corrugation maximizes the pans strength and prevents warping, denting and other effects of everyday use. Plus, it also minimizes surface contact which translates into evenly baked products that are easily released. No need for messy and unhealthy oil and grease. This pan is coated with Americoat. Americoat is a proprietary silicone coating. It provides a clear, non-stick, environmentally friendly, non-toxic baking surface, specially formulated for superior baking. It s FDA approved, it does not contain PTFE s or PFOA s. Oven safe to 450 Degrees F. Easy care. To clean, simply wipe clean after use, soap and water are okay to use. As a one time purchase for the actual pan with my current recipe I pay less than a dollar a loaf and deliver a fresh from the oven homemade bread that is much tastier and has more substance than the whipped up store bought loaves and if using a mixer my total working time is approximately 5-6 minutes to put in ingredients, approximately 3-4 minutes pushing down and shaping. The rest of the time is simply rising or actually baking and with the cover this pan creates a work of art! Soft thin crust on all sides (top and bottom) and a light flavourful bread to create slices as large or thin as you prefer for your own liking. Definitely recommend this pan for anyone enjoying the wonderful flavour of freshly made bread and anyone wanting to save on the more pricey store bought variety. Finding a recipe to expertly fit this pan has become easy as more experienced bakers are choosing the larger, beautifully shaped loaf pans!

The recipe uses 20oz of flour in total and this pan takes the entire batch at once. It seems sturdy enough, and the non-stick coating will likely last, as long as it doesn't go through the dishwasher. I've made several loaves successfully now, and I am quite satisfied with this pan. I slice the loaves shortly after baking and then freeze them. I pull the slices out of the freezer as needed, to make sandwiches and to toast.
The key with this pan is to initially and gently push the dough into the pan before the final rise, so that it fills the bottom corners. Then let it rise until it is almost touching the lid. Be sure to have the oven pre-heated during the final rise. I think if you let the bread rise too much in the pan, then putting the loaf in the oven might damage the pan due to expansion. Key is, the bread should be just about touching the top, and then immediately placed in a hot oven. Putting a pan of water in the oven also helps the bread expand to fill the remaining space.
i bought this pan during Covid quarantine and it has become part of my weekly ritual. Bread baking is a great way to relieve stress. It is cool to be self-reliant. I even grind my own grain to flour in a Vitamix.

Clearly someone needs to rethink the packaging. There was no box to protect it and I almost thought it was a returned item even though I don't think it was.
Other than that, the baking is superb: very even and bread is easy to remove without having to oil or flour the pan. It conducts heat so well that I had to reduce the bake time by 10 minutes which is a first for my oven. Another bonus I discovered is that I can use it as a bread box for keeping bread on the counter without letting the bread dry out. Brilliant!
The lid fits super tight. Actually the first time I used it, it blew off in the oven because I thought I had it on but you really have to slide it all the way to the end to lock in place. Rising bread creates a lot of pressure while baking so I suspect if that's happened to you, it might not be on all the way.
Overall, I would definitely buy it again.

Aún así al comprarlo y hornear el pan; se queda uno sorprendido, puesto que el pan no se pega, se desprende muy bien del molde y deja un horneado parejo. El molde es pesado, pero se puede apreciar la calidad de este al verlo y sopesarlo. Realimente es un molde que cualquier persona que guste de hornear pan se le recomienda puesto que tiene calidad y cumple con lo que se necesita en obtener un pan bien horneado. Nota: Se debe tener en cuenta el cuidado del producto al seguir las instrucciones para el uso del mismo, al igual que la receta que uno va a emplear para elaborar el pan que uno quiera. La receta que uno use es importante al igual que el molde en donde uno vaya a hornear su pan.
