    You don't need much for thickening. I thicken in a glass of broth or water first so its not too thick. Better to judge how much thickener you need. consistency is more on the jelly side but not noticeable when mixed in.

    The amount in the package will be way more than I will ever need in my lifetime...because, a scant 1/4 tsp will thicken a salad dressing, gravy, stew, etc. Xanthan Gum is tasteless, so when you use it, it will not alter the flavor of your recipe. It's so handy, and works like magic, just add and stir. If you look on the labels of most dressings, you will note the dressing contains this gum. That's why store-bought salad dressings are thicker than homemade.
