About the author

Claude Jolicoeur is the author of "Cider Planet" and of "The New Cider Maker’s Handbook", a book that has been acclaimed worldwide as a major reference on the topic of cider making. In French, he has authored "Du pommier au cidre", and collaborated to the collective work "La transformation du cidre au Québec".
A mechanical engineer and research scientist by profession, he started in late 1980s making cider as a hobby. Since then he has accumulated a vast experience, always searching to obtain the highest quality possible. His ciders have earned many awards at competitions, including a "Best of Show" at the prestigious Great Lakes International Cider and Perry Competition (GLINTCAP).
Claude has traveled widely throughout the Cider Planet, is regularly invited to be a guest speaker or cider judge at international cider festivals and events, and actively participates in discussion forums such as the "Cider Workshop". He currently works on the evaluation of wild native apples for the establishment of collections of high quality cider apple varieties that are well adapted to eastern Canada conditions.

I liked that this book focused on the science of things, along with a complete approach to the whole process. Whether you are in for just a small artisan batch, or wish to push to a small business scale, all the options are discussed in this guide.
The writer's mechanical engineering background provides us with plans and building advice for apple mills and presses, which is a pretty useful addition for the serious brewer with a lack of money to buy or rent everything. This book has many clear pictures of what fermentation looks like,
I liked that the fermentation process is explained and illustrated in many details, along with pictures to make everything clear. There is also an extensive section on trouble shooting your cider, with common (and uncommon) problems.
Additionally, the end of the book presents a great bibliography, with comments from the author, which I found to be super helpful.
This book may seem intimidating, but it's really not. The author has written this guide with the phrase "the book I wish I had when I started cider making". The main idea here is to do it right from the start, and avoid some nasty mistakes.

There’s lots of great information about cider making, apple varieties, and apple press and mill making. While I loved the amount of technical information and math in this book, I can understand how others may find it daunting or unnecessary (especially when he throws around words from numerical methods like third order regression). If you’re looking for more of a scientific or textbook approach to cider making than the average cider blog has, this book is for you.

I have also read Cider: Hard & Sweet, by Ben Watson, and Cider: Making, Using & Enjoying Sweet & Hard Cider by Lew Nichols & Annie Proulx as my "go-to" cider books. Both those books have been very useful to me throughout all my hobby batches, but The New Cider Maker's Handbook takes the cake. I would recommend all three to be the core of a cider hobbyist's library, but this book is ordered in the way that I would have preferred when starting out, contains lots of details that I wish I had known, and focuses on making simple cider very well without distracting the reader with information about oak barrels, keeving, cider diseases, vinegar, e.t.c. (all things that I was extremely distracted by, when I should have just been focusing on the basics)

He gives you all the formulas and graphs of the process that make for excellent references, and you will use them time and time again. He walks you through the processes of making a simple, "first" cider right up to making complex blends, sparklings, etc..etc...I lean on this book heavily and am so glad to have found it. It is the most comprehensive and complete book on cider making that I have found to date.

The author mentions that he wishes he had this book when he started - and I can say that I'm glad Mr. Jolicoeur created this reference to help the next generation of cider makers.
Although created for an American audience, I find it to be equally valuable to Canadians (I'm in Quebec).

The author tends to overuse the "as we will discuss further in chapter X". Once you take all the bits and pieces together, you can learn a lot from this book. I very much appreciated the part on keeving and ice cider. Followed the recommendations and mine have turned out pretty good (so far!).
