100% pure, wood-fired, single batch, Amber Maple Syrup, from our family farm on St. Joseph's Island Ontario.
- We do not buy and package syrup in barrels produced by other syrup manufacturers. Ours is a craft unblended product and the specifics of our "terroir" (heavy clay soil), as well as the impact of changes over a single season influence the flavour of any batch of syrup. The hearty maple flavour will be a consistent feature.
- By evaporating using wood for fuel, and producing electricity for all equipment from on-site solar panels, our syrup is as close to being "carbon neutral" as possible.
- Electricity for all pumps, lights and electrical equipment in our sugar camp is produced by "grid tie" solar panels.
- Wood fuel for our evaporator is cut from injured, dead or defective trees from our own maple bush. In their place, new healthy trees are released from competition and will eventually consume any carbon produced by wood burning.
- Unlike most syrup that uses from 0.5 to 1.0 gallon of non-renewable oil to produce a gallon of syrup, our process is as close to “carbon neutral” as we can possibly achieve.
- This pure, natural, maple syrup has no additives. We only sell syrup we make on our farm.

According to studies comparing the total antioxidant content of natural sweeteners to refined sugar products like white sugar or corn syrup, substantial differences in total antioxidant content were found. Refined sugar, corn syrup and agave nectar contain minimal antioxidant activity, but maple syrup, dark and blackstrap molasses, brown sugar, and raw honey showed higher antioxidant capacity (with molasses having the highest). (3)
A strong reason to use switch your sweetener? Maple syrup nutrition is impressive when it comes to supplying protective antioxidants.
Some of the primary antioxidants found in maple syrup include benzoic acid, gallic acid, cinnamic acid, and various flavanols like catechin, epicatechin, rutin and quercetin. While most are found at low concentrations, others are present in higher quantities, so it’s possible that the benefits of these antioxidants might counteract some of the downsides to consuming the syrup’s high quantity of sugar.
2. Gets a Lower Score on the Glycemic Index
