While my gas oven vents out various gases, it also vents out moisture. To make bread, I have been using a Lodge 4.5 quart round dutch oven. Not any more. With my new 7.2 quart bread & loaf pan I can make large batards and not-too-longish baguettes. I could fit a couple largish bread tins inside it if I wanted to.
It came preseasoned. However, I scrubbed the bottom down with hot water, dried it, fried (potato peel + grapeseed oil + salt) until smoking while moving the mixture around to all inner parts of the bottom, did the same for the inverted top, scrubbed them both down with hot water again, heated them both up, lightly oiled them both - inside and outside this time, got them to smoking, placed them hollow sides down in the oven at 450 for and hour. This was enough for me. Others might repeat the oven part a couple more times with new oil.
The first picture shows the bottom and the inverted top and makes me wonder what I might decide to cook in the inverted top. The flat part of the inverted top fits very nicely over my stove grates.
The second and third pictures show a small pit about 1 cm wide and 3 mm deep (the deepest part) in the bottom pan. The flaw is not on the cooking surface, so it makes no economic sense to return such a heavy item. However, I don't want rust to form in the pit, so I'll attempt to fill it in with some burnt bread crumbs mixed with grapeseed oil.

- Reviewed in Canada on January 14, 2023Verified PurchaseThis is far less expensive than the Challenger bread pan. The slanted handles make the heavy lid easy to lift. Just be sure to check that the lid and the bottom of the pan meet correctly when it arrives, because you want to trap steam in here for baking bread. I make a lot of sourdough, and it is much easier to lower the bread into this than into a Dutch oven. Preheat it to 500 in the oven, lower the bread into it on parchment paper, add an ice cube, close the lid and reduce temp to 425. Bake for 15 minutes. Remove the lid, turn it upside down in the oven and set the bottom into it. This creates air space and solves the problem of burned crusts. Bake for another 15 minutes. The loaves are beautiful with a wonderful crust. Basically, follow the instructions with the Challenger pan, which is considerably more than twice the price. Seasoning this was straight forward. Just follow the enclosed instructions. Very happy with this pan. Just be sure to check it when it arrives to make sure the two parts fit together as they should.

Verified PurchaseIch hatte mein Brot immer freigeschoben auf einer Steinplatte oder in einem gusseisernen Bräter von Le Creuset gebacken. Mit den Backergebnissen war ich immer zufrieden. Nun las ich hier in einer Rezension, dass dieses Produkt das Backen in eine andere Dimension bringt. Ich habe schon länger mit dem Challenger Brottopf geliebäugelt. Leider ist der seit Ewigkeiten hier nicht bestellbar.
Also jetzt den Cuisiland bestellt, sieht ja ähnlich aus, ist aber deutlich leichter, und getestet. Nach Lieferung fiel mir gleich auf, dass die Materialstärke nicht dicker ist als bei dem Bräter von Le Creuset, außerdem schloss der Deckel nicht bündig, er wackelte auf dem Unterteil.
Was soll ich sagen? Das Backergebnis war enttäuschend. Durch den undichten Deckel ist offenbar der aus dem Brot heraus entstandene Dampf entwichen. Das Brot ist kaum aufgegangen. Nach dem Abkühlen angeschnitten, es war sehr kleinporig und fest. Auch von der Farbe war es nicht so dunkel wie erwartet.
Das gleiche Brot heute wieder im Le Creuset gebacken und alles super.
Fazit: Den Cuisiland eingepackt und retourniert.

Verified PurchaseI am really happy with this bread pan. I use it to bake sourdough bread. Previously I used a cast iron Dutch oven. This has helped with oven spring of the bread, as I suppose it’s got more room inside to create the steam. It’s not too heavy. It only just fits in my oven on the shelf, so I am glad I didn’t get the Challenger bread pan as it might have been a bit bigger. It’s already seasoned. I make sure I don’t get any water in or on it, as baking bread it only needs a wipe out with a tea towel for any excess flour. It bakes at high temperature so no worries about it not being washed. This will ensure it doesn’t rust, at least that’s what I hope. I will come back and edit this review if it does.

Verified PurchaseI started experimenting with bread baking and fell down the rabbit hole and started baking sourdough bread. I first bought an enamel coated cast iron Dutch oven and was a nice pacifier but in hindsight it was an unnecessary purchase. I kept baking and studying how to make sourdough bread and discovered this Dutch oven. OMG! This is the BEST! I had a loaf rising when the box arrived and I quickly removed it from the box! I was prepared to have to season it as noted in the reviews. I quickly turned on my oven and coated the oven inside and out with avocado oil because it is heat resistant. I put the new Dutch oven in the oven and set the timer for 1 hour as directed in the pamphlet that came with it. I left the room and anxiously awaited the timer to sound. Next I heard my smoke alarm! LOL. My kitchen was in a puff of smoke. I checked and the bread oven was just fine so I turned on the exhaust fan (should have done that in the first place) and left the room again anxiously waiting for the bell to ring. When the timer sounded, I took the new bread oven out of the oven and it was sleek and beautifully seasoned. The pamphlet suggested doing it a second time so I let it cool a bit then recoated it. By this time my bread was ready to bake so I put it on a piece of parchment and placed it in the heated bread oven, spritzed the loaf with my trusty spray bottle and closed the lid. In 30 minutes I removed the lid and discovered a perfectly shaped loaf. I continued baking it for 20 minutes and removed it. This pan is wonderful! Yes it’s over $100 but it is also almost $200 less than the similar one. It is about an inch narrower but it is plenty big and roomy. I encourage you to buy this! It is SO worth the money and seasoning effort. It literally produced a perfect loaf!
