    I use this in place of cornstarch in my recipes to be a bit healthier. It definitely needs to be mixed with cold water prior to adding to hot sauces. I still find that any sauces have a minor aftertaste, and it can get gummy very fast. Overall, it is a great replacement for cornstarch.
