I used this lavender extract in making a sponge cake, and it yielded a surprisingly pleasant taste.
My recipe was as follows: 8 eggs, 1 cup all-purpose flour, 1 cup sugar, 4 oz. milk, 4 oz. vegetable oil, 1 teaspoon salt, 1/4 teaspoon cream of tartar, 3 drops of the lavender extract. 鈥 Separate the egg whites and yolks. 鈥 In one bowl, mix the egg whites and cream of tartar. Mix until fluffy. 鈥 In another bowl, mix the egg yolks with the sugar, milk, and vegetable oil. Then slowly mix in the flour and add the 3 drops of the lavender extract. Mix everything together well. 鈥 Add the first bowl into the second, then use a spatula to fold the two mixtures together. 鈥 Pre-heat the oven to 350 掳F and then bake for 45 minutes. Take out to cool.
My base recipe results in a fluffy and moist sponge cake, and the extract certainly gave it a unique floral taste. While I enjoyed it, my partner didn't like it that much - she found it to be just okay. Since I was mostly testing the extract's potency, I can understand her reaction, as you'd normally balance its flavour with something like vanilla extract or lemon zest.
I'm happy with the product and am eager to try it out in other baked desserts.
Update: I decided to try the recipe again, but with even more extract since I enjoyed it; 6 drops gives a really nice bold, floral flavour if you want a stronger taste.
