    I’ve used SAF yeast for years for making pizza. I ran out and picked up some Fleishman’s IDY from the grocery store. All IDY are the same, right? WRONG! Different brands have different strains each with different properties. SAF rises less, has a good balance between crispiness and breadiness. Fleishman’s is much pouffier and softer. It’s likely that every recipe can be adapted to whatever yeast you have with a lot of trial and error. Key is that they are NOT INTERCHANGEABLE. SAF works for my recipe.
