  Never trust your oven. Ours showed a consistent temperature, much like the weather channel. But it turns out that temperature was inaccurate, much like the weather reports. This handy dandy probe, plugged into my iGrill, showed us the fluctuations so we could adjust. The only flaw is that the single probe holder is too narrow for the oven rack - it would have been nice to include two different sizes so wider racks would make this perfect.
