  Initially, the press & hold button did nothing with this action. however, mashing my finger down on it hard, woke it up. top surface stiff. (becoming more flexible with use).
  
  Believe the manual: Cooking at 390°C for 20 min. DOES MAKE THE OUTSIDE HOT enough to burn flesh. Avoid touching.
