    Bought in Jan 2022. Fluidity is 2/5, not 3/5 (cf. official website, or you'll see it on the new packaging). That's a bit disappointing to me as I prefer more fluid chocolate.

    Taste-wise, it's not bad. I'm not a huge fan, but compared to most dark chocolates we can find in Canada, it's really not too bad. It can even be rated "awesome".

    I personally prefer Valrhona, but of course, Valrhona is also a lot more expensive.

    Overall, this "Chocolate - Dark Bittersweet Callets - 2.5 kg (5.5 lbs) - Callebaut 70-30-38NV" is a really good chocolate for Canada.

    And the tiny drops (0.5g/drop) are really awesome for melting. Or for cookies too. Well, you could also complain that the modern trends for cookies are larger chunks of chocolate.

    Tips for hot chocolate, if you're interested: put some chocolate in a mug (I use 30g, about 1oz), pour milk (cow milk or non-dairy alternatives, follow your preference) just enough to cover the chocolate. Microwave for 30 seconds. Take it out, mix (very easy, with a stick or a spoon) for 10-30 seconds. Then add more milk while stirring, until you have enough. Then heat for 1 more minute in the microwave.
    => proper high quality hot chocolate in just about 2 minutes!

    If you prefer darker, add more chocolate at the start or add less milk, if you prefer sweeter, use milk chocolate instead, or sweeter chocolate, or add sugar (or maple syrup?).
