    I was looking for alternative grains that are gluten free so I tried buckwheat. It cooks much faster than you anticipate so the first batch I made turned out mushy. The second time I tried it I cooked it less time, but it still came out mushy. The taste is really good, very nutty, I really wanted to like it but it has the texture of dry mashed potatoes and not what I expected.
