Stainless special steel
Top quality starts with the raw material. That is why knife steels are manufactured to the highest standards.
ZWILLING uses a special steel for its knives - the ZWILLING special melt. This steel has an optimum ratio between carbon (hardness) and chrome (corrosion resistance). This special composition in combination with the manufacturing process results in a robust and extremely durable knife.
Knives made from ZWILLING's special melt are stable, corrosion-resistant and flexible - the result of excellent material quality and manufacturing methods.
Ice hardened blades
ZWILLING uses FRIODUR ice hardening to achieve the optimum degree of hardness. Ice-hardened blades are extraordinarily cutting, flexible and particularly resistant to corrosion.
The process goes through four important steps of heat treatment: heating the steel to over 1000°C. The steel is then very quickly cooled to below 800 °C and then slowly cooled to room temperature. This process ensures the necessary balance between hardness and elasticity. Ice hardening causes further transformation processes in the steel, which improve hardness, wear behaviour and corrosion resistance.
Another process removes tension from the material. This creates special flexibility, gives safety in use and prevents blade breakage. This makes the knives very hard, corrosion-resistant and still flexible.
Sharpening knives - but how?
Even a good knife loses its sharpness over time. But it is easy to sharpen a knife if you have the right tool and know how to use it correctly. But even with the knife sharpeners developed by ZWILLING, re-sharpening with light pressure is simple and safe. ZWILLING sharpening stones are ideal for the experienced knife sharpener. These are available with different grain sizes, depending on whether the knife only needs a fine sharpening or a new basic sharpening.
