Platinum Catalytic Filter
The filter works similarly to a car's catalytic converter. Platinum is a very efficient catalyst in chemical reactions. By infusing platinum particles in the filter, it allows the filter to chemically decompose odor components into carbon dioxide and water more efficiently. Smoke is also chemically decomposed in a similar way. A catalytic filter itself does not change or easily deteriorate, and does not have to be replaced, as opposed to other filters.
Heat Reflectors
Two reflectors are located behind the top and bottom heaters. The bottom reflector, called the floating reflector, floats atop a shallow pool of water. The water helps to keep the temperature of the reflector down in order to reduce smoke from oil or food particles that may fall onto it and become burnt-on.

Verified PurchaseOverall, the fish roaster is really good. I have used at least daily since getting it, maybe 20 times now. It does a fantastic job of giving you nice crispy fish while maintaining both tender and moist interiors regardless of the type of fish fillet you use. It isn't too bad to clean, not a simple "wipe down" but - less work than if you pan-fried yourself a fillet.
The catalytic exhaust on the top works okay, but it isn't a miracle machine. The house will smell far *less* fishy than if you pan fried or baked fish in your kitchen but there is still a bit of smell which is generated when you cook the fish. A bit unavoidable.
You will want to read the full instructions and ensure you *always* cook with water. If you do not, it will smell a lot more like fish and the inside of the machine will be covered in soot. It's a hard lesson to learn once if you forget the water! It is significantly messier to clean out afterwards as well - let alone it being a fire hazard.
The only negative I have to say is that I think Zojirushi skimped out on the top reflector piece. The machine is made up of five different large metal components:
- Top Lid - Coated in a silverish finish. This is a steel lid and reacts to magnets. The coating seems durable.
- Bottom Container - Coated in a black finish. This is also made of steel and reacts to magnets. This coating seems durable to me so long as you don't leave water in the machine 24/7.
- Grilling Grate - Polished stainless steel and does not react to magnets (as it should be). This will truly resist rusting.
- Bottom Floating Reflector - This is made from aluminum and does not react to magnets. This is good as it is where the drippings go, and ideal that it is not a low quality (ferric) stainless steel.
- Top Lid Reflector - This is where Zojirushi skimped out, the reflector is a lower qualify (ferric) stainless steel that magnets react to. The first use, any popping moisture in your fillet onto the reflector will patina it because the metal is reacting. For sure, this will be the weakest long-term component of the machine. I was disappointed to see that this was not aluminum like the bottom reflector or proper non-ferric stainless steel like the grill. I took a point away for this as the cost increase for the material to have been higher quality would have been minimal and drastically benefitted the consumer. Attached is a picture after the 20ish times of use which is actual discoloration of the metal.
Overall, I still recommend the machine.

5.0 out of 5 stars Great way to cook fish without the mess and the smell
Verified PurchaseHigh points:
• Better tasting fish due to direct heating from top and bottom in close proximity to the fish
• Less smell due to full lid and vent with filter
• Low smoke due to water tray to catch drippings
• Works really well for oily fish like mackerel, salmon, black cod
• Easy to disassemble and clean, no need to wipe down the kitchen afterwards
Very easy to use. Fill the drip tray with some water, preheat the roaster, put the fish in for desired time and that’s it! The roaster has top and bottom heating elements so there isn’t as much of a need to turn the fish and risk breaking it up, but since you can only set a timer, not temperature, you may want turn to insure even cooking since the top heating element sits closer to the fish than the bottom one. I have never had an issue with flareups like one of the reviewers, but I don’t apply a lot of oil or marinades to my fish – maybe that was the cause. Since it is fully lidded with only a small vent with a filter at the top, very little of fish smell comes out of the unit unlike cooking it over the stove. I normally put the unit on a cookie sheet on the stove and turn on the range hood. Any fish smell coming out of the vent goes right out of the house.
Clean up is really easy. The bottom tray, drip pan and grill pulls away from the heating element and the base so you can carry it to the sink and wash it. The top comes apart similar to the bottom but has a few more latches to remove the individual pieces. The heating elements can be wiped down after they cool. I clean mine after each use so it still looks as good as new after owning it for 2 years. I’m not sure what some of these other people do to theirs for it to rust. . .
Very happy with the purchase. It allowed me to enjoy cooking and eating fish again.
