Westpoint Naturals baking Instructions: Breads - ¾ tsp per cup of flour. Cakes - ½ tsp per cup of flour. Cookies - ¼ to ½ tsp per cup of flour. Xanthan gum powder may have trouble mixing if the liquid is overly sugary especially when creating beverages and treats high in processed sugars. Westpoint Naturals recommends storing our Xanthan Gum in an airtight container and keeping in a cool, dry place out of direct sunlight. Shelf life of Westpoing Naturals Xanthn Gum is approximately 12 months under ideal storage conditions.

Westpoint Naturals Xanthan Gum is created when the sugar glucose is fermented with a bacterium found in cabbage known as Xanthomonas campestris. During fermentation, a white powder is formed known as xanthan gum.

    Bought for my smoothies and cafe coffee smoothies. Wow. Incredible. It’s a real secret restaurant hack. Use 1/8 tsp or even a pinch less per serving as you blend in the smoothie with the rest of the ingredients. This will last a long time!
    Uses are endless. Salad dressing, sauces etc.
    The best part is Xanthan gum, (which derives its name from the species of bacteria used during the fermentation process, called Xanthomonas campestris) is entirely natural and it has been found safe around the globe for human consumption.

    I have used home made (35%) whipping cream and use only a tiny amount of this: 1/8tsp per 1/4 cup unwhipped cream. This binds amazing and has the perfect consistency of store bought cool whip. Add this at the very end after you have whipped the cream and added any sugar or vanilla for flavouring. It does give the whipped cream texture a little more of a “gummy” texture true to its name but so is cool whip because thus is on the list of ingredients for it. If you prefer a completely natural flavour you can try less of this or just not use it at all (but then it wont be fridge stable one day later…). You can also mix this directly with cold ingredients unlike almost all gelatins.
