    So it appears there is a learning curve in making empanadas. I made the dough from scratch and make a filling of sweet potato and ground beef and spices. Rolled out the dough. When the mold is open it has a circle cutter in the back side which is handy. The first one I made stuck a little. I brushed the mold with water before inserting the circle of dough the next time and that helped a lot. Put them in the oven to bake. They stayed together, but really lost the imprint crimp. The smaller one in the photo was made by hand and crimped with a fork and it held better It was my first time making empanadas, so I am sure some of the imperfections of the final product are my fault. I think a smaller mold would be easier for beginners. They were delicious in spite of their appearance. I will definitely attempt them again.
    The listing shows them being used with tortillas. I don’t believe that would work unless the tortillas were very fresh and soft.
    I really wish the mold had come with a dough recipe (most online recipes were for smaller molds so it was definitely difficult to judge how many empanadas I was even making). It would also have been helpful to have directions and tips on use.
    Hopefully my next ones will be prettier!
