Compare the ad photos with those of the two jars with missing content I have posted, the first photo being of the unopened and sealed jar I received today, the other two photos I've posted being of the second of the problematic jars, which was received as my second order.
These two jars have substantially large and virtually identical vertical "cavities" (obviously, with only one possible exception, NOT caused by product separation, which would create a HORIZONTAL cavity in the case of "floating oil" products, like that in natural peanut butter jars, at the top instead)---cavities that comprise about 10% of the volume of these two ghee jars.
The attached first photo is of the perfectly SEALED and UNOPENED third unit, which arrived today, in which the huge gaping VERTICAL space is clearly visible.
Although I know nothing about the mechanics of how these jars are filled, the identical cavities suggest an
automated or natural physical process is causing this. But this is only my speculation. However, a company agent did explain that the ghee is free-flowing liquid when poured into the jars, which suggests that if shipped on its side, the jar would develop the kind of pocket shown in my photos, upon solidifying.
If the "missing" ghee is being intentionally omitted to achieve the advertised target weight of 400 grams, one would imagine it would be omitted from and REMAIN on the top, unless it was, but due to high enough temperatures in transit and shipment with the jar in a horizontal instead of vertical orientation, the contents shifted along the length, creating a cavity that became permanent on re-solidification.
But the problem with this explanation is that the jars AS SHOWN IN THE AD are indeed COMPLETELY FULL.
An intentional cavity, whether horizontal or vertical would/should appear in the promotional photos. but does not. Not at all.
Another concern is whether the cavity, which is an AIR POCKET, contains enough oxidizing oxygen to cause some degree of rancidity, depending on the duration and degree of exposure to light and heat, as well as the oxygen, while in transit, despite being sealed.
This is my best analysis, but there is no substitute for clarification from the manufacturer or vendor, which would make this otherwise very good product "clarified butter" in a second sense.
Finally, reports about the sourcing of the ghee are inconsistent and confusing. Although I have been authoritatively told the ghee is produced in Canada and New Zealand only, other, online information mentions India. So, clarification of this would also be greatly appreciated, especially since online reviews of the Savera grass-fed ghee elsewhere are quite favorable.
Some indication of the sourcing on the Savera Foods website would be much appreciated.
