I'll be honest, I was honestly a little skeptic about a product like Third Wave Water and if it would really make that big of a difference to the taste and clarity of my coffee. Long story short, I now have a subscription for this product through �鶹��. The point of Third Wave Water is it is the perfect mix of minerals to add to distilled water for making coffee. Having done a side-by-side comparison of coffee made with filtered water and a brew made with Third Wave Water, the difference is almost night and day. The filtered water coffee wasn't necessarily bad, but there is a clarity in the flavour profile of the coffee made with Third Wave Water that is truly incredible. If you are like me and enjoy buying and brewing coffee from speciality roasters and really want to get everything you can out of the beans, Third Wave Water will not disappoint you. Truly a game changer.

Yesterday I mixed my first batch of Third Wave Water.
This morning I pulled my first shot using it as my brew water.

I get it.

Right now I'm brewing Friedhats' Ethiopian.
The tasting notes for the beans are Strawberries, Raspberries, and Lychee.

It's hard to quantify a sensation. But I'll do my best.
Before switching to customized brew water the taste were hints of the above, a tart almost sweet taste that was somewhat fruity. With the Third Wave Water there is far more clarity. It's more still tart, but now it feels ever so slightly more sweet than tart. The description of strawberries and raspberries feel much more honest, it reminds me of both. Kind of like picking and eating wild raspberries the ones that are almost ripe.

Makes a huge difference if you have your brewing technique completely dialled in. I take a pretty scientific approach to my pour over and this has been a game changer for me. I don’t think the benefits are as pronounced if you are not weighing your beans and measuring the precise amount of water you use and fine tuning your grind. Use distilled water (free of minerals) in conjunction with Third Wave to ensure you are benefitting from the optimal mineral profile (your tap / filtered water has minerals in it). I’ve been using this product for years now and notice a huge difference (coffee loses its brilliance and focus) when I do not use it. I hope this helps.

Hi. I live on a few acres outside of town and are on a well. The water is hard so I've taken to distilling my well water and then using it for our coffee and tea. What I like about this Third Water Mineral Packets is that they come in individual packets. 1 packet per gallon. I can do that. I like the way it helps my (distilled) water to have any sort of taste. Plan Ahead - Try to Not Need it Immediately!

I've used two different profiles and find they definitely improve coffee flavor, as well as feeling of 'smoothness' or 'silkiness' in the mouth. The difference is sufficiently great that, once I started using Third Wave Water, I've never stopped. Now, I must keep an eye on the supply chain of distilled water - which turns out to be a bit erratic.

Anyway, I have repeatedly noted that the crystals are very slow to dissolve - even with much agitation. I went so far as to take out a cup of distilled water from the new jug, heated it to near boiling, tried to dissolve the crystals and then re-introduce that hot cup with the crystals back into the entire gallon. No luck! Still nowhere near fully dissolved. With repeated observations, I find I must wait about two days at room temperature with occasional shaking of the jug to have reliable, full dissolution. In practice, this means I plan ahead so as to not let myself run out of usable Third Wave Water. If I'm going to the extra effort and expense, I want to have the full benefit - which is excellent. If I don't plan ahead, and start dissolving early, I wind up having my initial, partly-dissolved water too dilute and subsequent aliquots too concentrated.

This is not really irksome. I used to brew using a manual espresso machine; a lot of effort for a cup of coffe. Now I use Nespresso pod-type machine. Much less work and mess. So, a small extra effort to have the best water, doesn't spoil it for me; just an additional step in the τέχνη of really good coffee

Not a Be-All-End-All Solution, but Still Good

For what it's worth, I almost rated this much, much lower. My water at home is egregiously hard and makes even my favorite coffees taste like trash water. Brita water fares only slightly better, and spring water is too varied and unreliable for long-term solutions. Coffee Reddit swears by the remineralization of distilled water, and these packets are touted as the simplest method.

My first experience with them was not good. While my coffee didn't taste like garbage, it was very dull tasting—like drinking a coffee while suffering from the common cold. Despite being catered towards lighter roast coffees, this product makes water a bit too hard still to properly extract the fruit-like acidity of many light roast coffees—particularly those from East Africa.

It took some experimenting, but ultimately I was able to find a way to make Third Wave Water work for my coffee and my taste buds. For more acidic and "wild flavored" coffees, like those from Ethiopia or Kenya, I use about 60% - 70% Third Wave Water and 30% - 40% straight distilled water to lower the overall hardness and accommodate that fruity acidity. For light-medium or medium roast coffees, particularly those from central or south America with more chocolate/caramel/nutty flavors, you can use it at nearly full strength.

Like I said, it takes a little bit of trial and error to fit your personal tastes, but I enjoy how simple this makes the water portion of coffee. $18 makes 12 gallons of water which will last an insane amount of time if you, like me, make smaller cups (8oz.) and dilute to fit your taste. Despite my initial impressions, I am actually impressed and will keep using these moving forward.
