The 9oz CMC Powder is a handy food-grade thickener for my kitchen experiments. It’s 100% pure, doubling as a tylose powder for fondant, gum paste, and candy, or a stabilizer for ice cream and yogurt. The 9oz size lasts well for frequent bakers, and with an expiration date of November 2029, I’ve got years to use it. No clumping so far—just scoop and mix!

- Reviewed in Canada on February 25, 2025I am truly impressed with this product. I usually use guar gum in making my ice cream and this works equally as well for that. I tried the CMC powder as a stabilizer as I like to make "whipped cream" out of skim milk for a low fat version. I used my immersion blender with the whipping blade. 250ml of cold skim milk, 1/8tsp of CMC powder and whipped for about 1 1/2 minutes. I tripled the volume of milk! It was still soft but was stable enough to top desserts. Can't wait to try this for my next cake that I use true whip cream on. I did see on some other reviews that this left a slight salty taste but I have not noticed this so far in the recipes I have used this in.

This food-grade carboxymethyl cellulose (CMC) powder is excellent for cooking and baking. I have recently been become more involved with molecular gastronomy and 'food science' based approaches to cooking. In general, CMC is an impressive functional food ingredient with useful properties.
Unlike methyl cellulose, which gels when it's heated (and uniquely melts as its cooled) or MCC (not water soluble and doesn't thicken/gel), CMC is very different. CMC is cold water soluble and does not need to be heated to hydrate. It also thickens and has great water-holding properties...but as its heated it does not gel.
CMC can be added directly to recipes like cookie dough or pasta and it will simply assist in hydration. I personally like adding MCC to certain cookie dough recipes to prevent spreading. At proper ratios, CMC has good mouthfeel and is really a useful functional ingredient.

Carboxymethylcellulose is s useful thickener/stabilizer, but you will need to look elsewhere for guidance. There are some basic mixing instructions and ratios on the package, but not detailed. While this isn’t the most common ingredient, it is still used widely enough that guidance is pretty easily available. This version seems to be as expected, and is packaged in a jar (a bit oddly shaped, but nicer than just a pouch, which can be a problem with powders).

I've been eating gluten-free for about 30 years, and I make my baked goods from scratch, with flours I grind myself in an electric grain mill. In order for gluten-free flour to work in many recipes, especially for breads and shaped doughs, a thickener or gum is needed. Most commercial flours use xanthan gum, which I don't tolerate, so I generally use guar gum. I've trialed this CMC powder in place of the guar gum I usually use, in exactly the same quantities, and it worked perfectly. I'm very pleased with this product and would recommend it to anyone cooking for a celiac or following a gluten-free diet. However, it should be noted that this CMC powder comes in a tall, narrow container that might be too tall to fit in some spice racks or low shelves--please see the photo I took of my baking supplies cupboard for reference.
