I Just made my first batch of Christmas Jam using Pomona's Pectin. I used Swerve in place of sugar and was very pleased with the result of my labour. I try to avoid using refined sugar whenever I can so when I saw this on 鶹, I decided to give it a try. I in fact had everything to gain and nothing to lose so to speak. I tripled my batch and followed the directions as best as I could, and it still resulted in a beautiful Jam. In the past I have used other sugar -free pectin’s (which contains Aspartame, which I detest) and not only did it totally change the taste but the texture as well. Pomona’s did not change it in any way, and I could add as much or little sweetener as I wanted. A little Pricier than some but worth it, and if one were to figure in the cost of sugar saved it is not so bad afterall. The old saying my grandmother always said is so true when it comes to Pomona's Universal Pectin " You get What You pay For!!!
