Bioquímica graduada en la Facultad de Farmacia y Bioquímica de la UBA. Complementó su formación académica con numerosos cursos de posgrado, especializándose en las áreas de Calidad e Inocuidad de los Alimentos.

Es profesional gastronómico, recibida en el IAG.

Fue fundadora y presidenta desde 2004 al 2016 de la Asociación Argentina de Gastronomía Molecular (momento de su disolución). Dirigió el área de Seguridad e Higiene del Instituto Argentino de Gastronomía (IAG) desde el 2001 al 2010. Desarrollo para el IAG el curso on Line de “Seguridad e Higiene de los alimentos” en el año 2019. Continúa dictando los cursos de Química Culinaria para las especializaciones del IAG desde el año 2001. Divulga los conceptos de química aplicada a la cocina a través de las redes Instagram @marianakoppmann. Ha participado de números encuentros internacionales sobre el tema.
