About this item
- Baker's Ammonia (Ammonium Carbonate) is a leavening ingredient called for in many old fashioned recipes. It is also called "hartshorn".
- Baker's Ammonia is used to make extra-crisp cookies or crackers. Unlike baking powder or soda, it does not leave an alkaline off-flavor in baked goods. It is not used for leavening in cakes or other large-volume items as the ammonia gas will not evaporate entirely.
- Note: You will notice an odor of ammonia while baking, but this will quickly dissipate and the finished baked product will not have an odor or taste of ammonia.
- Because Baker's Ammonia has a tendency to evaporate when exposed to air, it should be stored in a jar with a tight cover. It will not spoil, but will "disappear" if not stored properly.

About the same time in England, a revolutionary method of producing ammonium carbonate, by the distillation of deer Horns was developed and became commonly known as "harts horn". Eventually, this form of ammonium carbonate became more readily known as "bakers Ammonia", which it is still referred to in today's baking industry. "Bakers Ammonia", or ammonium carbonate, is a uniform high purity leavening agent, produced by a chemical reaction of Ammonia, carbon dioxide and water. Ammonium carbonate is a product of exceptionally high quality and should not be confused with ammonium bicarbonate, which has a lower Ammonia content. Ammonium carbonate is a White crystalline powder which yields a strong ammoniac odor. It decomposes into Ammonia, carbon dioxide and water At elevated Temperatures. This unique property of complete decomposition into gaseous products at temperatures above 59oc is one of the most important features of this product. Decomposition occurs slowly when ammonium carbonate is opened to the atmosphere, but increases significantly when exposed to higher temperatures normally used in the baking process. Ammonium carbonate can be dissolved in water At room temperature, which is a convenient way to add to dough for even distribution.

I bought this product in an attempt to lower my sodium intake. It worked well in my waffle batter. They turned out crisp on the outside but moist inside. A word of warning though, mix the batter well. I neglected to do this and got a mouth-full of ammonia. Apart from the smell when cooking the waffles, it's a good product to use in place of baking soda for pancakes, waffles and, according to Wikipedia, cookies. It won't work for cake and other large baked items since the ammonia gas can't escape. Baker's ammonia also needs to be kept in its container with the lid tightly screwed on. otherwise the product breaks down into ammonia and carbon dioxide.

Verified PurchaseI have been making holiday Anise cookies since my husband, of German decent pointed out his Mom used to make them and he hadn't had any since she passed away. I could never find Hartshorn though and this made the cookies much more chewy and crisp like he remembered them. Finally found out Baker's Ammonia (Ammonium Carbonate) is the same thing, though again, not easy to come by. Well THIS year I used it and though it does stink to high heaven once it gets in the batter, the smell dissipates and what's left behind are high-rising crispy anise cookies like my husband remembered. I was delighted that he was delighted and would go through the brief but obnoxious ammonia smell again just to see the smile on his face. Glad I found it on Âé¶¹Çø for a reasonable price and that it worked so perfectly!
