Kulinaria Hasselback Story

The Hasselback Story

The Hasselback method began in Sweden. In 1953, Leif Elisson was a trainee chef at the historic Hasselbacken restaurant and culinary academy in Stockholm. During the course of his training, he created the now famous potato recipe and named it after the restaurant.

The Hasselback Potato (Hasselbackspotatis in Swedish) remains on the Hasselbacken restaurant menu to this day. Over the years, other chefs and home cooks have expanded the Hasselback method beyond the potato, to ingredients such as zucchini, carrots, parsnips, pears, apricots, apples, and many more.
