Directions
Rinse buckwheat groats. Cover and simmer in 1 1/2 part of water for 1 part of buckwheat. Cook 15 to 20 minutes or until water is absorbed. Remove from heat and let stand for 5 minutes. Fluff with a fork and serve. Add your favourite vegetables.

Don't over-roast. Immediately add to pan of 500 ml salted, boiling water, with 1/2 medium onion (chopped), 1-2 Tbsps tomato paste, and 1-2 tspns garlic powder. Stir, reduce heat and cover until cooked (about 10 minutes) Buckwheat is a complete protein, having all 9 amino acids in it. Very satisfying.... hint: Beats rice in cabbage rolls!

when you cook them the consistency is good and the grain stays in its shape. I also use them to make a fermented, buckwheat bread and the flavour and the consistency are very good.
The roasted version I do not cook it And I use it like granola in my milk or yoghurt they’re crunchy and the flavour it’s much stronger.
The reason why I do not cook the roasted one it’s because the consistency becomes like a cooked oatmeal and it’s too mushy for me and the bouquet flower it’s too strong

This buckwheat would be good for breakfast porridge or to put in dumplings, or as a filler in savoury pies. But if you want it for a salad, know that they don’t have that nice toasty or nutty buckwheat taste and consistency that you would find in the red-hulled ones. If you overcook it, it will quickly turn to mush. I recommend toasting it first in the pot until they brown. Add a bit of salt to the water and cook just long enough until it still tender. I use a bit less water so it won’t mush up. And I don’t recommend that you keep it on high heat for too long for the same reason. Turn the heat to low and add diced apples (or bananas or blueberries), half a cup of cream or milk (more or less, to your liking), honey, cinnamon, ginger powder, walnuts and raisins. Stir, turn off the heat and let sit in the covered pot for 7 mins. Enjoy!
