Because it's powdered, it will be easier to use in cooking and baking, especially when measuring.     I use honey powder for sweetening roasted walnuts and it brings a wonderful honey taste to these snacks in addition to making my own spice rubs with less salt and a touch sweeter. With just 6 to 7% honey content and the rest sucrose and the like, it still tastes like honey. I wished it made with maltitol instead of sucrose and dextrose.
