Although these are one of the most expensive Soba noodles in the market, so I only like to use this to make Traditional Japanese cold Soba, which is a once in a while comfort food to make. I don't like using these for other type of noodle soup, it just doesn't tastes the same, since they are salted.
So basically if you know how to cook up a Traditional Cold Soba, or make the Traditional Japanese noodle bun, this is for you. I don't recommend to use it for hot noodle soup, because the noodles gets more delicate after cooking, and breaks easily after being cooked.
These noodles are delicious, a great alternative to wheat pasta. They cook quickly and are good with both Japanese style sauce as well as in cold salads, and with other sauces as well. I got another bag and I’ll definitely purchase again.
Was sceptical when I first got them because the resembled cardboard but they are actually a great noodle! They take on the flavor of whatever broth or seasoning you cook them in very well. Will buy again
It's the first time I've purchased these noodles via 鶹. I've enjoyed these Japanese buckwheat noodles for years but the noodles in this package taste much saltier - regardless of the sauce, the salt flavour was too much.

Very decent price for such quality soba. This Japanese soba is a bit different from what I usually have in a good way. It comes with slight salty hint of tea flavour, I personally felt it tasted better than Chinese soba I usually have ( which tasted more rough n bitter as buckwheat ). It tasted very pleasant with either soy bean paste or various of marinated toppings. As for those who felt their soba noodles gluey, cook the noodle for 3 mins instead of 5 and please try quickly rinse the noodles with cold water then drain it. Asian noodles are not necessarily to be water-boiled hot so long your paste or toppings or soup is warm enough.

Best priced, great texture noodles...I love buckwheat noodles on cold salads or in soups/stews but recently the prices have soared, double at my local market. I bought two of these this week since this is a staple in my pantry, I may buy more. The secret to cooking these noodles is to not overcook them...they are delicate and can become mushy in seconds. I buy all my noodles from this company, ramen, udon, brown rice noodles and soba.
I love these noodles for hot summer lunches. These are different than your regular ramen or udon noodles. I boil these and then strain them, rinse with cold water and throw some ice cubes on them to get them really cold. I like to use Shirakiku Soba Noodle Soup Base (Tsuyu) (found on 鶹) or Yamaki Tsuyu Soup Base (not on 鶹 at the moment) to dip these in. Pair this with a small salad and Kewpie sesame salad dressing, and if I'm feeling really bougie I hit up my local Safeway and pick up a California roll. Best lunch ever lol. I live somewhere where we don't have a lot of Asian restaurants or grocery stores so it's really nice to get this and have on hand. For two people I use about 1 and half of the noodle bundles. It's not a lot but when you pair it with a little salad and maybe fried zucchini and the sushi roll it feels extravagant.
