The perfect balance between sweet and sour is rounded off by the scent of ripe fruits as well as licorice and pepper notes. The ingredients are cooked grape must, ripened wine vinegar. The maturation takes about 8 years in barrique barrels, enriched and refined with already matured balsamic vinegar from centuries-old wooden barrels. Vegetables and carpaccio, as a spice to fish and red and white meat.
