How to temper Ghirardelli 60% Cacao Chocolate Chips

Directions

  1. Heat chocolate to 117-118°F / 47-48°C until completely melted.
  2. Add about 25% by weight unmelted chocolate. Stir and mix continuously until it reaches 80-82°F / 27-28°C.
  3. Gently warm chocolate back up to 88°F / 31°C until all added chocolate is completely melted.
  4. Work with chocolate between 86-90°F / 30-32°C.
