Larger glass jars are handy for many things. I've made Kombucha in the past using glass jars with a cheese cloth to allow carbonation to escape, but this method doesn't work with other fermentations that requires an otherwise airtight environment. Sauerkraut crocks have an ingenious airlock that uses an inverted bowl submerged in water that allows CO2 to escape but not let air in, however those crocks don't adapt well to other fermentation projects. The airlocks in this bundle work in a similar fashion to the Sauerkraut crock's water seal to allow pressure to be released when the yeast converts the natural starch and sugars to CO2 and has pressure that needs to be released. The last thing you want is to have a fermentation jar explode and make a mess. I've used similar air locks when making wine in carboys to allow pressure to escape yet not let more air in. Simple, yet genius.
