Just a tablespoon or two of vital wheat gluten in your next loaf of bread, cake, or cookie can improve its elasticity and create a better crumb and chewiness in the final product. Vital wheat gluten is also used in seitan by adding vital wheat gluten with spices and seasonings, and liquid.

Ingredients
- 1 tbsp olive oil
- 1 large yellow or white onion diced
- 2 cloves garlic minced
- Salt and Pepper to taste
- 1 tsp paprika
- 2 tbsp tomato paste
- 1 cup vegetable broth
- 1/4 cup chickpea flour
- 2 tbsp nutritional yeast
- 1 1/2 cups vital wheat gluten
How To Make
Seitan
Vegan meat alternative
- In a pan, heat oil and cook onions until softened
- Add garlic and cook until the garlic is softened. Add the paprika and other spices to the pan, stir, and cook for 60 seconds
- Transfer to a blender, add tomato paste, vegetable broth, chickpea flour, and yeast. Blend until smooth
- Transfer to a mixing bowl and add the vital wheat gluten, then stir until evenly combined. Once stirred, use your hands to knead the mixture for about 2 minutes
- Wrap the dough in tin foil and steam in a steamer for 1 hour flipping half way
- Let the seitan cool and refrigerate for at least 8 hours
- Cut and enjoy!

I think I like it better as it didn't have a strong smoke flavour like some commercial burgers that are at local grocery stores. After a sample burger, I added some chopped onions and rehydrated dry shiitake mushrooms and I think it got even better. My husband loved it. I will make taco meat with the other half I froze.
