  • Sodium Alginate (1g)
  • Calcium Lactate or Calcium Chloride (1g)
  • Flavored liquid or juice (100ml)
  • Water (200ml total for bath and solution)
  • Immersion blender
  • Pipette or syringe
  • Slotted spoon
  • Mixing bowls & Measuring tools (grams/ml)

How to Use Sodium Alginate to Make Popping Boba:

Ingredients and Equipment on the right

  • Dissolve 1g of Sodium Alginate in 100ml of water. Use an immersion blender to ensure it is fully dissolved. Let the solution rest for 15-20 minutes to remove bubbles.
  • Combine 100ml of your favorite juice or flavored liquid with 1g of Calcium Lactate or Calcium Chloride. Stir thoroughly until completely dissolved.
  • Use a pipette or a syringe to drop small amounts of the flavored liquid into the Sodium Alginate solution. Watch as they form into perfect spheres!
  • Let the spheres sit in the Sodium Alginate bath for 1-2 minutes to form a stable gel coating.
  • Remove the popping boba from the bath using a slotted spoon and rinse them in a bowl of clean water to remove any excess Sodium Alginate.
  • Add the boba to teas, desserts, or cocktails for a fun, popping surprise in every bite!
