  • 250g finely chopped white chocolate
  • 1/8 tsp citric acid
  • 1 tsp lemon emulsion
  • 3 tbsp room temperature unsalted better
  • 3 tbsp heavy cream
  • 1/2 cup yellow sanding sugar
  • 1/8 tsp vanilla sugar

How To Make

Lemon Truffle with Citric Acid

Ingredients on the right

  • Microwave white chocolate for 15 seconds and stir, repeat until chocolate melts.
  • Add warm cream and butter to white chocolate and stir until smooth runny ganache is formed.
  • Then add lemon emulsion and stir to the mixture.
  • Let the chocolate mixture to cool then spoon around 20 rounds onto parchment sheets.
  • Leave the rounds overnight and roll each into truffle ball.
  • Mix yellow sanding sugar with vanilla sugar and citric acid to make the coating.
  • Roll each lemon truffle ball in the sanding sugar coating and transfer to serving tray.
