I do not understand the science behind baking but know that different ingredients can greatly affect the outcome. I love to bake and especially love to decorate cakes and desserts so I wanted a product to help stabilize the icings/fondants etc. This powder does seem to strengthen fondants and gum paste, making them easier to shape and mold for intricate cake decorations. It seems to add some elasticity and prevents cracking or sagging. I will continue to use this moving forward. A simple ingredient to add and it does make a difference. It does take some practice to get the right amount to get the texture you desire. Start small and add in small amounts at a time as too much can make it tough and overly stiff.
I have many friends that are gluten free so I was ecstatic to see this is great with gluten free baking. I'm just getting into gluten free baking so I dont have much experience baking them. When I added this to some dough I was trying, it did seem to improve the texture and again added a bit of elasticity which helped. I couldn't find any difference in taste overall which is fantastic. It does require proper measurements so it does take some practice. You also have to make sure it's mixed fully as it will clump. I have found that it's better to dissolve gradually in liquid or to mix thoroughly into dry ingredients. Overall, I’m enjoying finding various uses for it and find it does help. It definitely makes a huge difference with fondant and gum paste work! I do wish it came with more instructions for how to use the product. I had to do some research to see the best ways to use.
