#1 Cookbook on the #1 Diet
Bring the Mediterranean into your kitchen!

The Mediterranean Way
Incorporate the vibrant, healthful principles of the Mediterranean diet into your daily routine while finding endless inspiration for delicious cooking.
The Mediterranean diet isn’t a ‘diet’ in the expected sense: It’s a way of cooking that puts a daily emphasis on vegetables, beans and legumes, grains, and more seafood than meat. It’s about eating delicious food in satisfying, moderate portions in good company and in combination with activity.
The recipes that we share from our cookbooks translate the famous Mediterranean diet for home cooks with a wide range of creative recipes—many fast enough for a weeknight—that use ingredients available at your local supermarket. Along the way, we introduce you to the fundamentals of cooking the Mediterranean way, with tips on how to incorporate those fundamentals into every meal.
The Fundamentals
Use Meats and Cheeses as Seasonings
Instead of using meats and cheeses as main ingredients, Mediterranean dishes often use them as seasonings. Dishes aren’t drowned in sauce, but instead drizzled with extra-virgin olive oil or a yogurt or tahini-based sauce to add flavor and richness.
Limit Unhealthy Fats and Focus on Unlocking Interesting Flavors
Eating the Mediterranean way will help you eliminate unhealthy saturated fats, salt, and calories. One way of doing that is to use lots of fresh herbs and spices in your cooking. Another way to bring out flavor is to utilize cooking techniques such as roasting, braising, and grilling.
Embrace the Health Benefits
With its high amounts of vegetables and olive oil, which contains heart-healthy monounsaturated fats, the Mediterranean diet has been said to promote healthy blood sugar levels, improve cognitive function, and even prevent diseases like Alzheimer’s and certain types of cancer.

—USA Today
“To score the top spot on 鶹’s list of best-selling Mediterranean diet cookbooks, you have to be good. This one ispacked with 500 (!!) different recipes from all over the Mediterranean—Italy, Greece, Morocco, Egypt, Turkey—that have been tried and tested by the foodie pros at America's Test Kitchen. Another reason it's a top pick? ‘Itincludessuggestions for recipe pairings to make a complete meal, which can help with your weekly meal planning,’ says nutritionistAlissa Rumsey, RD.”
—Women’s Health
“America’s Test Kitchen has created the definitive guide to Mediterranean cooking. Although brimming with amazing recipes, this cookbook has so much more. This book opens with a concise overview of the Mediterranean diet and meal planning. The authors proceed to five-hundred mouth-watering recipes that require mostly easily obtained ingredients and cover every aspect of the meal . . . Many of the recipes are vegetarian and are clearly marked as such, as are quickly prepared recipes. Almost more significantly, the text is simply packed with additional information. The notes dispersed through the book contain valuable information for those wishing to ensure a good outcome and learn more about the intricacies of choosing ingredients and cooking techniques. The large, glossy pictures of the finished product typically found in cookbooks are traded for smaller pictures of the end product and important preparation details. Furthermore, nutritional information for all recipes is contained in an easily read chart at the end of the book. For those looking for the one book they need to master Mediterranean cooking, this is it.”
—San Francisco Book Review
“If you are a fan of PBS and have been able to view even one episode of America’s Test Kitchen, you probably realize how seriously the chefs and staff take the preparation of a recipe to produce a satisfying result . . . The new addition to their award-winning books is The Complete Mediterranean Cookbook and is comprehensive in the selection of 500 recipes in categories ranging from Tapas and Small Plates to the Fruits and Sweets at the end of the meal—a total of 12 chapters to enjoy. If you are thinking of adding a cookbook to your kitchen shelf, The Mediterranean Cookbook may be the one for you. The colorful cover of this book can make your mouth water, but a test of one of the recipes could produce an amazing meal for you and others to enjoy!”
—Westmont Public Library
“The Complete Mediterranean Cookbook tops our list [of the 10 best Mediterranean cookbooks in 2022] thanks to its 500-recipe collection and supplemental meal planning suggestions, recipe tags for quick or vegetarian meals, essential pantry ingredients, and more.”

- Reviewed in Canada on March 19, 2025Verified PurchaseI bought this book for my son-in-law who is an avid cook for Christmas. He has enjoyed using the book and has made many great meals.
- Reviewed in Canada on October 24, 2017Verified PurchaseOrdered this book after my wife and I decided to try the Mediterranean Diet. Most vegan and vegetarian diets are very difficult to follow especially after 40 years of home cooking with the occasional take out. The Med diet is much easier to follow and I would say better for you as it does incorporate some animal protein with a lot of whole foods. I have to say this book is jammed packed with a lot of recipes and has been an enormous help in planning meals that are healthy, and importantly, tasty. The challenge with trying to do this on your own is making healthy food taste great enough for you to crave it. This book helps a lot in that department, as it will introduce you to spices and herbs that make a huge difference. Not all the recipes will work for everyone, actually one of the first we tried was downright awful.Funny thing is we thought we might not be able to do this if they were all like our first attempt. But you need to give more dishes a try, and good thing we did because so far the last 10 dishes have been awesome. The soups and pastas are particularly tasty. Most are ones, I am happy to say, are weekly staples in our home, and dinner and lunches are fresh again! Leftovers are also a pleasure, I look forward to them the next day! So I would say this book does a great job and I recommend you try as many as possible to find your favs. It takes getting used to buying the new types of ingredients, but eventually you will have a fully stocked spice rack and fridge with the usual healthy ingredients.
- Reviewed in Canada on June 18, 2020Verified PurchaseI really like it. Some of the recipes are a little time-consuming but they are excellent. The book also contains several important information for those who are new to Mediterranean cuisine and to cooking in general. Some recipes are simpler than others. I recommend it for anyone who wants to try Mediterranean cuisine. I gave four stars because of the time it take to make some of the recipes.

- Reviewed in Canada on March 16, 2021Verified PurchaseI had a lot of hopes for this book and was not disappointed. The recipes are beautifully crafted. Not only are they delicious, but the fact that the team took time to describe their process and how they got to the final result is so interesting. I’m completely in love with this book. The only thing I would say is that a lot of the recipes are not cheap and some ingredients are more difficult to find if you don’t live near a market. I would’ve loved to see more affordable alternatives to certain fish for example. Also, you have to be ready to learn and take the time to cook. The recipes aren’t difficult per say but it’s still demands a love for cooking. Most plates are not something you can just throw together quickly. A good number of recipes also demand for a grill, which I do not own living in a third floor apartment. However, I will remedy this by buying a cheap indoor, electric grill and see if it does the trick.
- Reviewed in Canada on January 3, 2024Verified PurchaseWe bought the book because of the trust we have in Americas Test Kitchen and it didn’t disappoint. We’ve tried a few recipes and they were delicious and easy to prepare. We’ll continue to venture into new Mediterranean regions and recipes and am sure to enjoy them all!

3.0 out of 5 stars Eggplant Mutilation
Verified PurchaseLost two stars directly for Ratatouille recipe: "Remove pot from oven and using a potato masher or heavy wooden spoon smash and stir eggplant mixture until broken down to a sauce like consistency.” Eggplant is a delicate and wonderful vegetable and this recipe wants you to mash it like potatoes. Apparently the US based team doesn't understand the finesse in European cooking.

5.0 out of 5 stars Not just another recipe book!
Verified PurchaseI’m a fair cook, but since buying this book, I’ve learned more about how to choose, mix and prepare ingredients than I could have imagined. There are fantastic, delicious recipes - yummy zucchini and feta fritters, scallops with orange/lime dressing, orzo with lemon shrimp, to name just of few of the dishes I’ve already made!! The authors explain why they do certain things (e.g. braising vs. baking), provide really helpful tips (e.g. how to devein shrimp and zest a lemon), give overviews on basic ingredients like olive oil, beans and fresh herbs, and offer variations for many of the dishes. Nutritional information for each recipe is even provided!
Recipes are easy to follow and presented in a logical order that makes preparation efficient, even to the point of indicating when mixing bowls and pans can be re-used. To be fair, most of the recipes take more than 40 minutes to prepare, and while most of the ingredients can be found at any grocery store, they aren’t items I already had in my pantry. After making about 10 of the dishes, however, I now have most of the staples for Mediterranean cooking readily available and use them regularly. Buying sherry vinegar and ground coriander may seem like one-off investments, but trust me, you’ll be using these items again in no time! And to my surprise, this book has done such a great job educating me, I’m can now modify some of the recipes based on personal preferences! If you’re looking to change your diet, or for just a few great dishes, this book is a must have!
UPDATE: I've been using this cookbook for a year now, and have made more than 125 of the recipes, many on multiple occasions. All but 1 of the dishes have ranged from good to great! I've even tried some of the recipes that didn't sound appealing on paper and am so glad I did...who knew Spicy Turnips and Chickpeas could be such a delicious combo?? I can't overstate how great this cookbook is! My absolute only issue is the binding is weak. Pages started falling out almost immediately, so I suggest going with the spiral bound version if it's available. Happy cooking!

4.0 out of 5 stars libro americano de comida mediterránea
