MAPLE SYRUP NATURAL

HOW IT's MADE

So every spring I make a batch of syrup for you. Let me explain how I do this. In early spring, when temperatures start to rise above freezing during the day, I drill small holes (about 5 cm deep) into the trunks of mature maple trees. Then I insert spikes into the holes to direct the maple’s sap into metal buckets I have hung on the trees.

The sap is about 98% water, and sucrose, which gives the sap its slightly sweet taste. The sap also contains nutrients like amino acids, minerals like potassium and calcium, and other nutrients necessary for the maple’s growth.

MAPLE SYRUP

I carry the buckets two at a time to my sugar shack (a little factory I have built myself with my teeth and front feet).

I have a wood fire going in there and I pour the sap into a large pan and I heat it up for several hours to evaporate the water. The wood fire adds a unique flavour to the sap. The sap has turned into yummy syrup once it has reached a temperature of about 104°C or 219°F and has thickened. It’s really hot in the shack I tell you.

In case you are wondering, 40 liters of sap give me 1 liter of syrup. Anyway, once the sap has turned into syrup, I filter it to remove the “sugar sand”, the sediments if you will, to give my syrup the smoothest texture and an unmatched clarity.

Once I have made enough, I start bottling it. I reheat the syrup to around 85°C (185°F) and I pour it into sterilized bottles while it is still hot to prevent contamination. I carefully seal the bottles to preserve freshness and I store them in my beaver lodge, which is a cool, dark place.
